Meet Dairy Distillery. It might sound more like a cheese place to you but these Canadian guys use milk sugar a.k.a. Lactose to make Spirits. Admittedly, it wasn’t completely their idea as the Mongols have been doing it for over a thousand years. By marrying artisanal distilling techniques with cutting-edge science, they transform unused milk sugar to craft smoother and cleaner Spirits, which are also gluten-free. The production price might be higher but the Dairy folk doesn’t care about that. Their business also creates new opportunities for dairy farmers and reduces waste.
Like their other Spirits, Vodkow Vodka is made from milk sugar. In collaboration with the University of Ottawa, the Dairy guys have perfected a process that converts milk permeate into an unbelievably smooth Spirit.
